Ingredients:

1-1/2 cups graham cracker crumbs
2 tablespoons sugar
1/3 cup unsalted butter, softened

BATTER:
4 egg whites
3/4 cup unsalted butter, softened
1 cup plus 2 tablespoons sugar
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup sour cream
2 cups coarsely chopped fresh strawberries

FROSTING:
2 packages (8 ounces each) cream cheese, softened
1 cup unsalted butter, softened
3-3/4 cups confectioners’ sugar
1 teaspoon vanilla extract
Fresh strawberries and graham cracker crumbs

Directions
Line 24 muffin tins with paper liners; set aside.
Place the cracker crumbs, sugar and butter in a food processor; cover and process until fine crumbs form. Press tablespoonfuls onto bottoms of liners. Bake at 350° for 3-5 minutes or until lightly browned. Set aside to cool.
Place egg whites in a large bowl; let stand at room temperature for 30 minutes. In a large bowl, cream the butter, sugar and vanilla until light and fluffy. In another bowl, combine the flour, baking powder and salt; add to the creamed mixture alternately with sour cream, beating well after each addition.
Beat egg whites with clean beaters until stiff peaks form. Fold a third of the egg whites into batter. Fold in remaining egg whites and strawberries.
Fill muffin cups three-fourths full. Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
In a large bowl, beat cream cheese and butter until fluffy. Add confectioners’ sugar and vanilla; beat until smooth. Frost tops. Garnish with strawberries and cracker crumbs. Store in the refrigerator.

The legend say that this was the favorite dinner of Frank Sinatra. Maybe its true maybe just a legend but the fact is this is a very delicious meatball recipe.

Ingredients:

4 eggs
1 cup water
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 garlic cloves
1/2 cup breadcrumbs
1 1/2 lbs ground beef
1/2 lb ground pork
1 cup grated Italian cheese
olive oil, for browning

Directions:

Mix the eggs and water together.
Add in the salt, pepper, garlic and bread crumbs into egg mixture and let sit for 5 minutes.
Add the last 3 ingredients, and mix well.
Shape into balls, and then brown on all sides in olive oil over medium heat.

Ingredients:

Red Velvet Cake:
1 box red velvet cake mix
3 eggs
1/2 C. oil
1 C. sour cream
1/2 C. buttermilk or milk
2 tsp. vanilla extract
24 Oreos

Oreo Buttercream:
10 Oreos, twist and scrape off (or eat) the cream filling
1/2 C. butter, softened
8 oz. cream cheese
2 tsp. vanilla extract
3-4 C. powdered sugar
Extra Oreos for decoration

Directions:

Preheat oven to 350 degrees and line pans with cupcake lines. Sift cake mix into a small bowl and set aside. In a large bowl, combine eggs, oil, sour cream, buttermilk and vanilla extract until smooth. Stir in cake mix. Take your Oreos and place one at the bottom of each cupcake liner. Scoop batter over each Oreo to fill the liners about 3/4 full. Bake for 15-20 minutes or until an inserted knife comes out clean and let it cool.

Oreo Frosting: Take your Oreo cookies (just the chocolate pieces and not the filling) and crush in a plastic bag using a rolling pin. If you have a food processor that works the best! Sift your finely crushed Oreos to remove any lumps, because if you use a piping bag any big cookie pieces will clog it. In a stand mixer, beat butter and cream cheese. Add vanilla extract and slowly add powdered sugar until you reach your desired consistency. Fold in crushed Oreos. Don’t stir too much or the frosting will turn a gross (yet delicious) grey color.
Pipe onto cooled cupcakes and top with extra Oreos.

Ingredients:

1 can (8 oz.) refrigerated crescent dinner rolls
8 oz. thin sliced Ham, chopped (I just used sandwich meat)
6 eggs
1/2 cup milk
1/2 tsp. pepper
1 cup shredded Cheddar Cheese
1 cup shredded Mozzarella Cheese

Directions:

Heat oven to 350ºF.
Unroll dough in 13×9-inch baking dish; press to cover bottom of dish, firmly pressing perforations and seams together to seal.
Top with ham.
Whish eggs, milk and pepper until blended; pour over ham.
Top with cheeses.
Bake for 25 min. or until center is set.

This recipe makes 4 1 inch thick slices of French Toast
4 Free Range Eggs
1/2 cup of half and half
2 tablespoons of light brown sugar
1/2 good vanilla extract
a pinch of salt
2 cups of Cinnamon Toast Crunch

1 inch thick White Bread

Directions:

Place all of your ingredients except the Cinnamon Toast Crunch and Butter into a mixing bowl and beat with a whisk till everything is blended. Now place your first piece of bread into the mixture…let it sit for a minute and then turn it and sit for another minute…then place it on a place…repeat till you are done. Now you will have a plate with the yummy crumbs waiting, then you will coat both sides of each piece of bread with the the crumbs…just like you bread crumb eggplant! Preheat the oven to 200 degrees. Get your favorite skillet out, melt the butter on medium heat and place your bread in the pan. I cooked the toast on each side for 4 minutes. Be patient and make sure you get a nice rich golden brown crunch on both sides. When you toast is done…place the slices on a plate and put into the warm oven. Now make your next batch or if you are done…serve it up! Use your favorite syrup, sprinkle with powdered sugar if you like, then some fresh whipped cream and Cinnamon Toast Crunch Sprinkles.
